Hello everyone, welcome back to another ‘What I Eat in a Week’ video. My name is Chatera, and this week we’ll be focusing on meal prep using ChatGPT. Meal prep is one of the staples of my diet because it’s quick, simple, and allows me to eat healthy throughout the week.
To start off, I decided to make a lentil soup and a chickpea salad. For the lentil soup, I chopped up an onion and some carrots, sautéed them in a pot, and added tomato paste, vegetable broth, cannellini beans, lentils, and spices. I let it simmer while I prepared the chickpea salad.
For the chickpea salad, I chopped up cucumbers and tomatoes and mixed them with chickpeas, feta cheese, red onion, fresh parsley, and a balsamic vinaigrette dressing. I also cooked some quinoa to add to the salad.
I like to vary my meals throughout the week, so I don’t get tired of eating the same thing every day. I usually eat the same meals for two days in a row, sometimes three if I need to avoid food waste.
For dinner, I had the lentil soup and some chocolate-covered strawberries for dessert. For lunch, I had the chickpea salad and a protein smoothie. I also packed a salad with romaine lettuce, spinach, grains, and a vinaigrette dressing, along with some dark chocolate peanut butter cups for a sweet treat.
I continued meal prepping by making salmon with roasted sweet potatoes for dinner the next day. I also prepared the chickpea salad again and made stuffed quinoa peppers.
Throughout the week, I enjoyed my meals and made sure to include a variety of flavors and nutrients. Meal prepping has made it easier for me to eat healthy and stay on track with my nutrition goals.
